I have finally graduated from the Institute for Integrative Nutrition as a holistic health counselor. It's been an amazing year! I have learned so much from Joshua (the founder of the school), my classmates, and speakers such as Anne Marie Colbin, Marion Nestle, Dr. Neal Barnard, Dr. Deepak Chopra, Dr. Andrew Weil and many others.

 

So, many of you may be wondering what exactly is a holistic health counselor. As a health counselor I help individual clients learn about food, nutrition and healthy lifestyle. My approach is holistic, which means I also incorporate other areas of your life.

 

A couple of weeks ago I had a dinner cooking party with my very good friend Russell and his cooking club members. Russell wanted an ethnic menu, something from my past, so I opted for Brazilian food. The trick was to make some modifications on the menu from traditional Brazilian food to a healthier version, without the meat. Don't take me wrong, I'm not opposed to meat, at least not the good quality organic version, and consumed in moderation. It all worked out wonderfully. We had a marvelous time, all of us cooking together and learning. I will have those dinner parties soon, and hopefully you will be able to join me make wonderful and wholesome nutritious food.

Recipe of the Month

 

Fruit Salad with Pomegranate Molasses
 

 

I first discovered pomegranate molasses while taking a few cooking classes at the Natural Gourmet Institute in Manhattan. I became so enchanted by this sweet and sour heavenly syrup that I started experimenting with it in different dishes. One of my favorite ways of using it is simple - mix it with a few ingredients and add it to a fruit salad - perfect for this summer season. I hope you enjoy it as much as I do!

 

Ingredients:

2 tablespoons of pomegranate molasses

4 tablespoons of orange juice

½ teaspoon maple syrup

Various fruits (use whatever sweet fruits you find at the market)

 

Directions:

Cut all fruits in bite size pieces. Whisk the pomegranate molasses, orange juice and the maple syrup together. Pour on the fruit salad. Mix and serve.

 

You can find Pomegranate Molasses at Whole Foods or at Indian/ Middle Eastern food markets.
